I always try to cook with sustainability, locality and seasonality in mind, and endeavour to source the best quality ingredients possible, supplied or produced within a 10-mile radius.
Marinated for 24 hours in turmeric, cumin, garlic, coriander and chilli and slow cooked for hours until falling off the bone
Light, fluffy aubergine and feta dumplings in a fruity, spicy tagine sauce
A Persian, cinnamon spiced rice and lentil dish with vermicelli, caramelised onions, pomegranate seeds and coriander
An essential and delicious accompaniment to kosheri made with fresh tomatoes, cumin, garlic and chilli
Shredded red and white cabbage, carrots, red onion, fennel in a fresh lemon and spiced yogurt dressing

A crisp, folded pastry tart with thyme infused caramelised onion, wild garlic mushrooms and roasted butternut squash finished with crumbled feta and pine nuts

A refreshing treat of a salad made with fresh tomatoes, cucumber, onions, peppers and green grapes in a cumin vinegarette and a garnish of super crunchy garlicky sourdough croutons
